Oatmeal Casserole from "Potluck Survival Guide"

Oatmeal Casserole
Chef: Cherie Kimmons
Restaurant: Potluck Survival Guide

Entree

Ingredients:
2 cups frozen blueberries
2 Tbs. fresh lemon juice, divided
18 oz (one container) regular oats
3 large eggs, beaten
1 cup brown sugar, packed firmly
1 cup unsweetened applesauce
1-1/2 Tbsp. ground cinnamon
1/4 tsp. nutmeg
4 tsp. baking powder
1 tsp. salt
1-1/4 cups water
1 cup milk
1/4 cup (1/2 stick) melted butter

Instructions:
Preheat the oven to 350 degrees. Prepare a 9-inch-by-13-inch pan with non-stick spray.

Toss the blueberries with 1 Tbsp. of the lemon juice. Spread evenly on the bottom of the pan.

Combine the oats with the remaining ingredients and 1 Tbsp. lemon juice. Spread evenly over the blueberries.

Bake, covered, for 30 minutes. Uncover and continue baking for another 20 minutes, until the casserole turns golden brown and sets up.

Serve hot with cold milk or cream for pouring.

Makes 10 to 12 servings.

Notes:

Fresh blueberries work as well as frozen.

Try using different firm fruits: apples, peaches, cherries, pears.

Nuts are a great addition. Spread 1/2 to 1 cup of chopped nuts over the fruit before adding the oatmeal. Pecans, almonds, or cashews would work beautifully. Try toasting them for 5 minutes in a skillet before baking. The toasting really brings out the nutty flavor.
